Our client is seeking a Pastry Sous to join them at their luxurious 5-star game lodge, where exceptional cuisine meets unparalleled wilderness. As the Pastry Sous Chef, you will support the Executive Pastry Chef in creating and executing a diverse and innovative pastry menu. Youβll oversee daily pastry operations, ensure high standards of quality and presentation, and manage a team of pastry chefs
Key Responsibilities:
- Assist in designing and executing the pastry menu, including desserts, pastries, and bread.
- Supervise and mentor the pastry team, ensuring adherence to quality and safety standards.
- Oversee daily pastry operations, including production, plating, and presentation.
- Collaborate with the culinary team to integrate pastry items into the overall dining experience.
- Maintain inventory and manage ordering of ingredients and supplies.
- Ensure compliance with hygiene and sanitation regulations.
- Innovate and introduce new pastry techniques and trends to enhance the menu.
Requirements:
- Proven experience as a Pastry Chef or similar role, with a minimum of 3 years in a high-end or 5-star establishment.
- Culinary degree or equivalent certification in pastry arts preferred.
- Strong knowledge of pastry techniques, baking, and dessert presentation.
- Exceptional organizational and leadership skills.
- Ability to work effectively in a fast-paced, high-pressure environment.
- Creative flair with attention to detail and a passion for culinary excellence.
- Flexibility to work various shifts, including weekends and holidays.
